What more can you wish for when you have a fresh-baked creamy strawberry cake?

Naked Cakes are dangerous and really tricky but, honestly, they are worth taking the risk…..I got quite terrified when I was doing some research in the web because they all looked so freaking appealing and delicate…I just thought “How I will pull this off”? The hardest part is cutting the layers. My hands shook a little bit (a lot!).

This  Strawberry Icy Naked Cake is realty fresh and the dough is extremely fluffy with a light almond taste. The frosty is so simple you can do it with your eyes closed. The creamy texture given by the Greek yoghurt ups its game, bringing moisture to the table. What else can I say? Well, I’ve doubled the recipe.

The strawberries are the big stars of this show. After all, what can you do wrong? The truth is that they always look pretty and glowing. So, have hope…it’s hard to make them look ugly anyway.

STRAWBERRY ICY  NAKED CAKE
CAKE BATTER
  1. 6 eggs
  2. ¼ cup of coconut sugar
  3. ¼ cup of muscovado sugar (you can use demerara sugar or more brown sugar)
  4. 1 cup of almond flour
  5. ½ cup of rice flour (or brown rice flour)
  6. ¼cup of coconut flour
  7. ¼ tablespoon of baking powder
  8. a pinch of cinnamon/ vanilla bean
FROSTING
  1. 1 greek yogurt
  2. 15 strawberrys
TOPPINGS/DECORATIONS
  1. finely chopped strawberries
