Indeed, these are the best donuts ever! Moist, delicious and super- healthy. They’re made in a big bowl and no frying or kneading is necessary. Go ahead, have a mini- donut!
Their taste is right on the money and the consistency is light, airy, and you won’t even notice the lack of all purpose flour.

Hi SweetSpotters! Sorry for the time off, but these past days have been crazy-y. With all the school work… I haven’t had time do to anything else besides studying, studying… going through books and once in a while listening to my favourite Post Malone songs. In fact, I’m lying! But not too much! I have been busy, but I may have made some quick breakfast pancakes a couple times, this 20 min banana bread too (I haven’t had time to take photos) and date bars to keep me energized. Soon, I will share my recipe of the banana bread, don’t you worrryyy.
Lucky for me, the exam season is almost over and I’m starting to have some time off. That means baking, resting and trying new ideas! Time off also includes some extra body pump classes, watching lots of netfix series and maybe catch up on some reading that I’ve keep postponing. What about you? What have you been up to?
On top of all that, I haven’t made any Easter prep yet, but I guess I’ll leave that up to my mom! I know she will bomb me with recipe flavours, etc. She always has some out of the box last minutes ideas. Mom things, right? Me, I’m only thinking about Easter eggs decorations and coconut and chocolate treats! Whatever, share your ideas with me! What do you usually eat at Easter time? I will try my best to post two or three healthy “Easter inspired recipes”. I’ll try to post them just on time for you to bake them on time for the holidays. It’s this recipe! It’s soo damn good and simple. There’s not much to talk about these guys but I have one thing to tell you ” you should really try this recipe”. It uses spelt flour and I didn’t felt the need to add any frosting or icing. However, feel free to make my homemade jam! It’s completely sugar free too.
If you have never heard about spelt flour, I beg you to make these peanut butter cookies … but I promise they won’t last more than an hour in your house (fingers crossed guys!).

- 2 cups of spelt flour
- 200 ml of coconut milk
- 1 teasp.of vanilla extract
- 3 tbsp of olive oil or coconut oil
- 1/3 cup of muscovado sugar
- 2 tablesp.of maple syrup
- 1/4 tablesp.of baking powder + baking soda
- 1/2 cup of fresh chopped strawberries
- Preheat the oven to 180º(350F) and line a donut pan.
- Into a large bowl, sift together the flour, baking powder and baking soda. In a small bowl, whisk together the milk, olive oil, sugar, maple syrup and vanilla extract. Stir the wet mixture into the dry ingredients until just combined. Add the chopped strawberries.
- Bake the donuts for 25-30 (do the toothpick test). They should get crispy on the outside and moist on the inside!
