Dairy-free Layered Flan

New Year brings new opportunities, new possibilities and a brand new you! What a perfect way to ring in the New Year and get 2018 off to a great delicious start … Raise your glass and let’s party !

Well, this year was fierce and a roller coaster too …  I’ve changed a lot and grown. I’ve had good and bad moments but I can say this was a good year for me. I’ve learnt so much and I’ve got so many special things to remember. It looks like I’ve started this blog yesterday, the time really flew faster than I expected. I couldn’t be happier to share my recipes with all of you and, honestly, I feel like I’m bound to have this blog.

Celebrate the New Year with something a little different than usual πŸ˜‹! 

I just said I was bound to have this blog and what about you? Can you guess what are you bound to? You’re bound to fall in love with this elegant layered flan…  It has a pudding-like texture and it’s so gorgeous! 

Usually, I’m not a big fan of puddings or flans but this one really captured my attention. I come up with this recipe because I was trying to recreate the texture of the Dark Cherry Panna Cotta without using gelatin. I am so glad I gave it a chance and used agar agar. Never heard about agar? You can find more information here. It’s easy to find in almost every market and it’s not very expensive.

What is AWESOME? Our beloved no bake desserts are back on ✌️! You can leave the oven aside for a chilled dairy-free dessert. Ahhh! Experiment with your own toppings! Fresh berries, shredded, pomegranates, coconut or additional nuts would also work quite nicely.

Despite its name and creamy texture, my flan is nowhere near the traditional! It’s dairy free and this is exactly what you won’t find on this flan:


  • eggs
  • milk
  • sugar
  • butter
  • flour

Although you can make the flan in a full-size mold,  there is something quite awesome about making small portions in individual ramekins!

Layered Flan!
Yummy and super healthy!
Chocolate layer
  1. 6 dates
  2. 3 tablespoons of cocoa powder or cacau powder
  3. 1 g of powdered agar agar
  4. 1 teaspoon of vanilla extract
  5. 200 ml of coconut milk
  6. optional: 3 squares of dark chocolate
Pomegranate layer
  1. 200 ml of coconut milk
  2. 1 pomegranate
  3. 1 g of powdered agar agar
  4. 5-6 tablespoons of shredded coconut

Chocolate layer
  1. Blend the dates, cocoa powder and the coconut milk for 1-2 min (texture needed ...smooth βœ”).
  2. Tip the topping mixture into a saucepan and stir in the powdered agar. Add the vanilla extract and the pieces of dark chocolate and mix until the ingredients are well melted and combined. Bring to a boil over medium heat and divide the mixture evenly to the desire mold. Place in the fridge and start making the second layer ↴
Pomegranate layer
  1. Blend the pomegranate seeds. Pour the juice through a strainer (it will take some time). Use a rubber spatula to make it easier and gently press the pulp. Once you have enough juice, blend it with the coconut milk. Add the mixture to a saucepan, stir in the agar and bring to a boil. Remove the chocolate layer from the fridge and simply pour the pomegranate layer. Let it set on the fridge for 1-2 hours.
